Marvin Bonilla produced this micro-lot on a 27-acre farm called Mi Cafetal located in the community Rancho Quemado within the municipality of San Andres in the department of Lempira. Marvin uses his own micro-mill to process harvested cherries, which allows for meticulous care in depulping, fermenting, and drying the coffee.
The dry fragrance is enmeshed with a floral honey note, dark brown sugar, and hints of raisin and herbal tea. Fruit hints like berry, golden raisin, and some orange peel bittering. The acidic impression has tartaric berry characteristics and is mouth cleansing in light roasts. A hint of Darjeeling spice tea comes through as the coffee cools, adding a touch of elegance.
