This smooth and mellow natural coffee highlights deep chocolate and date sweetness, subdued acidity, and a touch of roast character, complemented by delicate rose-like aromatics.. Sourced from four small producers in Cauca’s Sotará region, the cherry underwent a 7-day anaerobic fermentation before being solar-dried at Banexport’s facility in Popayán, ensuring a refined, long-lasting flavor profile.
The farms, situated at 1800–1900 meters along Cauca’s eastern highlands, benefit from the region's cool, humid climate and volcanic soil near Puracé National Park. The solar drying process, designed to mimic East Africa’s harvest conditions, enhances the coffee’s complexity, yielding notes of nectarine, tomato, gooseberry, and baker’s chocolate.
