This coffee is processed using the washed method, where cherries are hand-sorted to ensure only the ripe ones are delivered for processing. After pulping, the parchment is fermented overnight, washed, graded, and then dried on raised beds for 9-15 days. This meticulous process contributes to the coffee's distinctive taste profile. The Kangurumai AB features a variety of coffee beans including SL28, SL34, Batian, and Ruiru 11, grown at an elevation of around 1630 to 1650 meters above sea level (MASL). These factors combine to produce a coffee with a rich flavor palette that includes notes of lemon, tangelo, green apple Jolly Rancher, and winey dark berries.
